Lucky Charms Pancakes are just as sweet and colorful as a restaurant treat but easy enough for a homemade breakfast that kids (and grown-ups) will love! These pancakes are on the sweeter side, making them a perfect treat for special mornings, weekend fun, or a St. Patrick’s Day breakfast surprise.

Why We Love Lucky Charms Pancakes

  • Fun For St. Patrick’s Day – I make these as a fun breakfast for St. Patrick’s Day for the kids. They are pretty easy to make and the kids really think they are fun for a treat.
  • Fun Dessert Or Breakfast – These pancakes are on the sweeter side, but are fun for a treat.
  • Make Restaurant Style Fun At Home– IHOP and other breakfast restaurants are known for fun pancake flavors, but we don’t always have to go out for a fun meal. Making this treat at home not only can save money, but allows me to make a serving that is a better size for her. (and for me too!)

Ingredients For Lucky Charms Pancakes

How To Make Lucky Charms Pancakes

  1. Place flour, baking powder and salt into a large mixing bowl and mix well to combine.

  1. Add the cream, milk, vanilla, oil, and beaten eggs to the mixing bowl. Mix with a wire whisk until all the ingredients are fully combined and the batter is smooth.

  1. Place the Lucky Charms into the batter in the mixing bowl. Gently fold in the cereal until just combined.

  1. Spray a large skillet with cooking spray or add a little extra cooking oil to the skillet. Heat the skillet over medium heat. A little butter can also be used in the pan, and it gives a great flavor to pancakes.
  2. Drop 1/4 cup portions of the pancake batter onto the warm skillet. Cook the pancakes for about two minutes or until golden brown. Flip the pancakes and cook the second side for an additional 1-2 minutes, or until the centers of the pancakes are fully cooked through. See notes in the recipe card.

  1. Work in batches until all the pancakes are cooked, then serve and enjoy! Top with an extra sprinkle of cereal and a dollop of whipped cream and a drizzle of maple syrup if desired.

Variation Ideas

Try Using All Marshmallows – I’ve seen both online and in stores around St. Patrick’s Day the mini marshmallows from Lucky Charms cereal sold without the cereal. You can use a full cup of these marshmallows in place of the cereal.

Other Types Of Cereal – While you can use any cereal you like, fruity pebbles or another cereal that has bright colors could also be swapped if you are making these for St. Patrick’s Day/

Swaps For A Full Box Of Lucky Charms Cereal – Lucky Charms are great for St. Patrick’s Day, but the store brand works just find too. If you don’t want to purchase a full box of cereal, you can try the individual cereal cups. I’ve seen singles of these cereal cups sold at gas station or pharmacy, or you can buy these four packs which will keep the remainder of the cereal fresher longer.

Use Sprinkles – Want the leprechaun look without cereal? You can add sprinkles to the batter of this recipe for a bit of fun. I recommend using the rainbow jimmie style sprinkles, as other types of sprinkles tend to have their color get lost in the batter.

How Long Will Lucky Charms Pancakes Last?

Expect these pancakes will last for about 3-4 days if stored in a covered airtight container in the refrigerator. I don’t recommend saving pancakes once they have been topped with whipped cream or maple syrup as they will get soggy. Pancakes can be reheated in the pan or in the microwave.

I don’t find these pancakes freeze really well, as the texture of the cereal and the marshmallow change. If you want to freeze some of these pancakes I recommend leaving the cereal out of the pancakes you want to freeze, and just adding a little on top when you serve them.

Lucky Charm Pancakes

Whether it’s St. Patrick’s Day or just a fun morning surprise, these fluffy pancakes bring a little extra fun to breakfast.

  • Place flour, baking powder and salt into a large mixing bowl and mix well to combine.

  • Add the cream, milk, vanilla, oil, and beaten eggs to the mixing bowl. Mix with a wire whisk until all the ingredients are fully combined and the batter is smooth.

  • Place the Lucky Charms into the batter in the mixing bowl. Gently fold in the cereal until just combined.

  • Spray a large skillet with cooking spray or add a little extra cooking oil to the skillet. Heat the skillet over medium heat.

Butter can also be used to coat the pan when cooking the pancakes instead of oil, and will give the pancakes a great flavor.
I’ve used a cast iron skillet in my images, but you can use any large skillet.
You can use another similar cereal to Lucky Charms or a store brand. I have also seen Lucky Charms marshmallow bits sold by themselves, which can be swapped out for cereal if you prefer.
Pancakes can be a little tricky because you need to watch them to get the right amount of heat. The first pancakes almost always brown a little more slowly then the following rounds of pancakes.
Pancakes can quickly become cold while you’re working on the additional batches. Place pancakes on a platter or plate and cover them to keep them warm, or place them on a pan in the oven set to warm.
Watch the pancakes brown carefully and adjust the heat down or up a little as needed. Adjusting the heat a little as you cook is really common so the pancakes cook evenly.
