As cottage cheese has risen in popularity over the last few years, I—and I’m sure you—have seen a whole bunch of weird, wacky, and delicious ways to use it. It’s been a fun ride, but many of those recipes (at least for me) are one and done.
This recipe, though, is different. It likely won’t go viral, but it’s simply one of my favorite ways to eat cottage cheese. It’s a quick go-to lunch or snack that I can make any time with just three ingredients I almost always have on hand: eggs, cottage cheese, and hot sauce.
It’s filling, high-protein, quick, and easy to prep ahead. I’ll eat it plain with a spoon or, more often than not, with crackers, toast, an English muffin, or a bagel. If you’re a cottage cheese lover (or cottage cheese curious), once you make this, I’m sure it will be something you turn to time and time again.
Make the Eggs Your Way
One of the best things about this recipe is that you can adjust it in many different ways, from using your favorite hot sauce (red or green) and whatever cottage cheese you have on hand to how you cook your eggs. I prefer my eggs cooked closer to jammy as opposed to hard, boiled for somewhere around 7 minutes.
The only difference the doneness of the eggs will make is the resulting texture of your egg salad. The jammier your egg yolk, the looser your egg salad will be. If you like a firmer salad that’s scoopable and holds its shape, use hard boiled eggs cooked closer to 9 or 10 minutes.

How To Make My 3-Ingredient Creamy Egg Salad
To make about 1 cup of egg salad, which will serve one for lunch or two as a snack, you’ll need:
- 2 large eggs
- 1/4 cup cottage cheese
- 1 tablespoon hot sauce (I love Cholula for this, but use your favorite)
- Kosher salt and freshly ground black pepper, to taste
Start by boiling your eggs as desired; I personally love this method from Julia Child.
Once your eggs are cool enough to handle, peel and mash them in a bowl with a fork. Add the cottage cheese and the hot sauce and mix to combine. Season to taste with salt and plenty of freshly ground black pepper.
Serve on its own or with crackers, toast, an English muffin, or a bagel, topping it all off with one more dash of hot sauce if you can handle the heat.

Easy Tweaks
There are just about as many egg salad variations out there as there are humans on this planet, so use this recipe as a starting point for your unique, off-script version. Here are a few ideas to get you started:
- Add a handful of chopped scallions, chives, or minced tender herbs like dill or cilantro
- Thinly slice some cucumber, radish, tomato, or carrot and arrange the veggies on top of your egg salad for an open-faced toast
- Swap the hot sauce for Calabrian chile paste
- Sprinkle your favorite toasted seed, fried onions or shallots, or everything bagel seasoning on top for some crunch
