It\u2019s been a fun ride, but many of those recipes (at least for me) are one and done.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_3-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> This recipe, though, is different. It likely won\u2019t go viral, but it\u2019s simply one of my favorite ways to eat cottage cheese. It\u2019s a quick go-to lunch or snack that I can make any time with just three ingredients I almost always have on hand: eggs, cottage cheese, and hot sauce.\n<\/p>\n<p id=\"mntl-sc-block_5-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> It\u2019s filling, high-protein, quick, and easy to prep ahead. I\u2019ll eat it plain with a spoon or, more often than not, with crackers, toast, an English muffin, or a bagel. If you\u2019re a cottage cheese lover (or cottage cheese curious), once you make this, I\u2019m sure it will be something you turn to time and time again.\n<\/p>\n<p><span class=\"heading-toc\" id=\"toc-make-the-eggs-your-way\"\/><\/p>\n<h2 id=\"mntl-sc-block_7-0\" class=\"comp mntl-sc-block lifestyle-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text\"> Make the Eggs Your Way <\/span> <\/h2>\n<p id=\"mntl-sc-block_8-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> One of the best things about this recipe is that you can adjust it in many different ways, from using your favorite hot sauce (red or green) and whatever cottage cheese you have on hand to how you cook your eggs. I prefer my eggs cooked closer to jammy as opposed to hard, boiled for somewhere around 7 minutes.\n<\/p>\n<p id=\"mntl-sc-block_10-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> The only difference the doneness of the eggs will make is the resulting texture of your egg salad. The jammier your egg yolk, the looser your egg salad will be. If you like a firmer salad that\u2019s scoopable and holds its shape, use hard boiled eggs cooked closer to 9 or 10 minutes.\n<\/p>\n<figure id=\"mntl-sc-block_12-0\" class=\"comp mntl-sc-block lifestyle-sc-block-image mntl-sc-block-image mntl-sc-block-image--no-theme no-theme figure-landscape figure-high-res\"><figcaption id=\"mntl-figure-caption_1-0\" class=\"comp mntl-figure-caption text-utility-100 figure-article-caption\"> <span class=\"figure-article-caption-owner\"><\/p>\n<p>Simply Recipes \/ Devan Grumsrud<\/p>\n<p><\/span><br \/>\n<\/figcaption><\/figure>\n<p><span class=\"heading-toc\" id=\"toc-how-to-make-my-3-ingredient-creamy-egg-salad\"\/><\/p>\n<h2 id=\"mntl-sc-block_13-0\" class=\"comp mntl-sc-block lifestyle-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text\"> How To Make My 3-Ingredient Creamy Egg Salad <\/span> <\/h2>\n<p id=\"mntl-sc-block_14-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> To make about 1 cup of egg salad, which will serve one for lunch or two as a snack, you\u2019ll need:\n<\/p>\n<ul id=\"mntl-sc-block_16-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">\n<li>2 large eggs<\/li>\n<li>1\/4 cup cottage cheese<\/li>\n<li>1 tablespoon hot sauce (I love Cholula for this, but use your favorite)<\/li>\n<li>Kosher salt and freshly ground black pepper, to taste<\/li>\n<\/ul>\n<p id=\"mntl-sc-block_18-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Start by boiling your eggs as desired; I personally love this method from Julia Child.\n<\/p>\n<p id=\"mntl-sc-block_20-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Once your eggs are cool enough to handle, peel and mash them in a bowl with a fork. Add the cottage cheese and the hot sauce and mix to combine.
