Why? Because I didn\u2019t really have any exposure to the delectable little treats growing up, so once I discovered just how succulent and silky the eggy bites were, I couldn\u2019t get enough.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_3-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> As it turns out, making <em>good<\/em> deviled eggs isn\u2019t an easy task. In fact, the multi-step process can be pretty tricky\u2014the hardest part being the actual cooking of the eggs.\n<\/p>\n<p id=\"mntl-sc-block_5-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> I turned to a true deviled egg expert to get the inside scoop on preparing the classic dish. Jenny DeRemer is a food writer, recipe developer, and creator of the food blog Not Entirely Average, and she specializes in Southern cuisine. DeRemer has <em>loads<\/em> of experience whipping up deviled eggs, so she has some seasoned advice on cooking eggs for deviling.\n<\/p>\n<figure id=\"mntl-sc-block_7-0\" class=\"comp mntl-sc-block lifestyle-sc-block-image mntl-sc-block-image mntl-sc-block-image--no-theme no-theme figure-landscape figure-high-res\"><figcaption id=\"mntl-figure-caption_1-0\" class=\"comp mntl-figure-caption text-utility-100 figure-article-caption\"> <span class=\"figure-article-caption-owner\"><\/p>\n<p>Simply Recipes \/ Mihaela Kozaric Sebrek<\/p>\n<p><\/span><br \/>\n<\/figcaption><\/figure>\n<p><span class=\"heading-toc\" id=\"toc-how-long-you-should-cook-eggs-for-deviled-eggs\"\/><\/p>\n<h2 id=\"mntl-sc-block_8-0\" class=\"comp mntl-sc-block lifestyle-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text\"> How Long You Should Cook Eggs for Deviled Eggs <\/span> <\/h2>\n<p id=\"mntl-sc-block_9-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> \u201cIn the South, deviled eggs are basically a given,\u201d DeRemer says. \u201cPicnic, wedding, funeral\u2014doesn\u2019t matter, there\u2019s always a tray of them sitting front and center.\u201d She goes on, \u201cEvery family has their own way of making them, whether it\u2019s extra mustard, a splash of pickle juice, or a classified ingredient nobody will admit to.\u201d\n<\/p>\n<p id=\"mntl-sc-block_11-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> But for DeRemer, the secret to the flawlessly prepared deviled egg lies in the cooking. In fact, there is a very clear set of steps she takes to ensure their perfection.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_13-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> \u201cI begin by placing eggs in a pot covered with cool water by about one inch,\u201d she explains. \u201cThen I set the stove to high and bring the water and eggs to a boil.\u201d Right when the water begins to boil, DeRemer cuts off the heat and immediately starts her timer for <strong><em>exactly <\/em>12 minutes<\/strong>.\n<\/p>\n<p id=\"mntl-sc-block_15-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> \u201cDon&#8217;t remove the pan from the burner because that residual heat is what is going to gently<em> <\/em>cook those eggs,\u201d she advises. Once the timer goes off, the eggs should be placed in cold water for eight to 10 minutes to stop the cooking process and make shell removal seamless.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_17-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Cook time is particularly important for deviled eggs because if the eggs are undercooked, the piped filling might not hold its shape, and you potentially run the risk of a foodborne illness. Conversely, if you overcook the eggs, not only will the whites become rubbery and taste more eggy, but you\u2019ll also \u201cend up with gray or green yolks,\u201d says DeRemer.\u00a0\n<\/p>\n<p><span class=\"heading-toc\" id=\"toc-more-expert-tips-for-making-perfect-deviled-eggs\"\/><\/p>\n<h2 id=\"mntl-sc-block_21-0\" class=\"comp mntl-sc-block lifestyle-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text\"> More Expert Tips for Making Perfect Deviled Eggs <\/span> <\/h2>\n<p id=\"mntl-sc-block_22-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> To remove the shells, \u201c&#8217;Roll&#8217; the eggs against the bottom of the pan or bowl gently while still submerged. The shells should be very well fractured to peel easily.\u201d Once the shells are removed, you can halve the eggs.
