Maybe you never even noticed it, but if you have, you can\u2019t unsee it. So, what is it exactly?\n<\/p>\n<p id=\"mntl-sc-block_3-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Contrary to popular belief, that\u00a0white thing floating in raw eggs\u00a0is not a\u00a0baby chicken\u2019s umbilical cord. It\u2019s not\u00a0an embryo, either. <strong>It\u2019s a\u00a0chalaza<\/strong>\u2014pronounced\u00a0<em>cuh-LAY-zuh\u2014<\/em>and it\u2019s totally normal and safe to eat.\n<\/p>\n<p><span class=\"heading-toc\" id=\"toc-what-is-a-chalaza\"\/><\/p>\n<h2 id=\"mntl-sc-block_5-0\" class=\"comp mntl-sc-block lifestyle-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text\"> What Is a Chalaza? <\/span> <\/h2>\n<p id=\"mntl-sc-block_6-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> If you study the\u00a0anatomy of an egg, you will notice two twisted strands on both sides of the yolk connected to the inside of the eggshell\u2014and that\u2019s what you\u2019re looking at when you see those white stringy bits. They\u2019re safe to eat, and once cooked, they disappear. They won\u2019t interfere with cooking,unless you\u2019re whipping up\u00a0custard or curd, in which case the eggs should be strained for an extra smooth texture. Simply pass them through a strainer or use your fork to pick out the chalazae.\n<\/p>\n<p id=\"mntl-sc-block_12-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Sure, it looks weird, but you should actually appreciate the chalaza: It\u2019s a sign that an egg is fresh and safe to eat. The visibility of chalazae makes it easy to\u00a0test the freshness of eggs. The more prominent the string is, the fresher the egg. Chalazae tend to disappear as an egg ages, so if you don\u2019t see at least one string in your raw egg, it\u2019s likely growing stale.
