While the book is excellent, especially if you\u2019re a fan of Ina or the original Barefoot Contessa series on Food Network, I kept thinking about a single recipe story she told in the book.\n<\/p>\n<p id=\"mntl-sc-block_3-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> When developing the recipe for her Outrageous Brownies, she discovered that it wasn\u2019t so much the type of cocoa or a little coffee that gave the brownies their distinct chocolate bitterness. Instead, <strong>Ina insists the balance of sweetness, richness, and chocolate flavor was bolstered by vanilla extract\u2014a whopping two tablespoons of the stuff<\/strong>.\n<\/p>\n<p id=\"mntl-sc-block_5-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> As soon as I finished the book, I preheated the oven for Ina\u2019s brownies. I needed to know if tons of vanilla extract would make for the best-ever brownies.\u00a0\n<\/p>\n<figure id=\"mntl-sc-block_7-0\" class=\"comp mntl-sc-block lifestyle-sc-block-image mntl-sc-block-universal-image mntl-sc-block-image--no-theme no-theme mntl-sc-block-image figure-landscape figure-high-res\"><figcaption id=\"mntl-figure-caption_1-0\" class=\"comp mntl-figure-caption text-utility-100 figure-article-caption\"> <span class=\"figure-article-caption-owner\"><\/p>\n<p>Simply Recipes \/ Meghan Splawn<\/p>\n<p><\/span><br \/>\n<\/figcaption><\/figure>\n<p><span class=\"heading-toc\" id=\"toc-how-inas-gartens-outrageous-brownies-are-made\"\/><\/p>\n<h2 id=\"mntl-sc-block_8-0\" class=\"comp mntl-sc-block lifestyle-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text\"> How Ina\u2019s Garten&#8217;s Outrageous Brownies Are Made <\/span> <\/h2>\n<p id=\"mntl-sc-block_9-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Ina\u2019s Outrageous Brownie recipe makes a <em>huge<\/em> batch of brownies. And when you consider that she first made them to sell at the original Barefoot Contessa stores, a sheet pan\u2019s worth of brownies to keep up with demand makes perfect sense. At home, a pound of butter, nearly two pounds of chocolate chips, and a pound of walnuts feels a little unhinged, but the recipe is pretty straightforward.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_11-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Even if you halved Ina\u2019s recipe to make it more comparable to a classic homemade brownie in volume, Ina\u2019s recipe would still have three times the amount of vanilla! Some recipes, like Simply Recipe\u2019s Fudgy Cocoa Brownies, don\u2019t call for vanilla extract\u00a0at all.\n<\/p>\n<p id=\"mntl-sc-block_13-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> As in most chocolate brownie recipes, butter and chocolate are melted together in a double boiler; flour, baking soda, and salt are sifted together; and then eggs, sugar, and coffee granules are stirred together with a large volume of vanilla.\n<\/p>\n<p id=\"mntl-sc-block_15-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Each of these mixtures is combined, and the brownies are baked in a buttered and floured 12&#215;18-inch sheet pan. Ina suggests rapping the pan on the oven rack about halfway through baking, and cooling the brownies completely\u2014including overnight in the fridge\u2014before cutting them into generous squares.\u00a0\u00a0\n<\/p>\n<figure id=\"mntl-sc-block_17-0\" class=\"comp mntl-sc-block lifestyle-sc-block-image mntl-sc-block-universal-image mntl-sc-block-image--no-theme no-theme mntl-sc-block-image figure-landscape figure-high-res\"><figcaption id=\"mntl-figure-caption_2-0\" class=\"comp mntl-figure-caption text-utility-100 figure-article-caption\"> <span class=\"figure-article-caption-owner\"><\/p>\n<p>Simply Recipes \/ Meghan Splawn<\/p>\n<p><\/span><br \/>\n<\/figcaption><\/figure>\n<p id=\"mntl-sc-block_18-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> These brownies have a crackled-crisp top and a fudgy interior studded with walnuts and chocolate pieces. At first bite, the brownies are sweet and buttery, with a subtle chocolate flavor. It would honestly be easy to get fatigued on the rich chocolate flavor, especially considering how large the brownies are, but I found myself going back for bite after bite and being surprised when I finished a whole brownie.\n<\/p>\n<p id=\"mntl-sc-block_20-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> If I hadn\u2019t already known the \u201csecret ingredient,\u201d I wouldn\u2019t have been able to tell you what made the brownie so irresistible! Of course, now I know that including a ton of vanilla extract balanced the richness of the semisweet chocolate and cut down on the brownie\u2019s overall sweetness.\u00a0\n<\/p>\n<figure id=\"mntl-sc-block_22-0\" class=\"comp mntl-sc-block lifestyle-sc-block-image mntl-sc-block-universal-image mntl-sc-block-image--no-theme no-theme mntl-sc-block-image figure-landscape figure-high-res\"><figcaption id=\"mntl-figure-caption_3-0\" class=\"comp mntl-figure-caption text-utility-100 figure-article-caption\"> <span class=\"figure-article-caption-owner\"><\/p>\n<p>Simply Recipes \/ Meghan Splawn<\/p>\n<p><\/span><br \/>\n<\/figcaption><\/figure>\n<p id=\"mntl-sc-block_23-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> While I can\u2019t say that Ina\u2019s brownie recipe will be my new go-to\u2014it makes more than my family of four can eat at one time\u2014I am very excited to try doctoring up my favorite boxed brownie mix with a shot of vanilla extract.
