You <em>have <\/em>to try that. It&#8217;s <em>sooooo <\/em>good. And you <em>have <\/em>to make the corn dip recipe on the website. I make it <em>every<\/em> week,&#8221; said a neighborly employee stacking chicken broth nearby (they must swallow sunshine every morning and that&#8217;s why they glow joy).\n<\/p>\n<p id=\"mntl-sc-block_3-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> I bought the salsa and made the dip, and now, many years, many jars, and many dips later, I am here to share the recipe with you. It&#8217;s out-of-this-world delicious and so easy to make, and I have yet to meet anyone who won&#8217;t go back for more.\n<\/p>\n<p id=\"mntl-sc-block_5-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> This recipe is inspired by the Kickin&#8217; Corn Dip recipe created by the Trader Joe&#8217;s test kitchen. Their recipe calls for five ingredients: cream cheese, the Cowboy Caviar Salsa, two kinds of cheese (Pepper Jack and Mexican-style blend), and roasted corn. I make mine without the Pepper Jack and roasted corn\u2014because it&#8217;s two fewer ingredients to buy, and I don&#8217;t miss them. Plus, the salsa already has corn, and the dip is still creamy, cheesy, and spicy.<\/p>\n<figure id=\"mntl-sc-block_7-0\" class=\"comp mntl-sc-block lifestyle-sc-block-image mntl-sc-block-universal-image mntl-sc-block-image--no-theme no-theme mntl-sc-block-image figure-landscape figure-high-res\"><figcaption id=\"mntl-figure-caption_1-0\" class=\"comp mntl-figure-caption text-utility-100 figure-article-caption\"> <span class=\"figure-article-caption-owner\"><\/p>\n<p>Simply Recipes \/ Myo Quinn<\/p>\n<p><\/span><br \/>\n<\/figcaption><\/figure>\n<p><span class=\"heading-toc\" id=\"toc-the-easiest-trader-joes-inspired-corn-dip-recipe\"\/><\/p>\n<h2 id=\"mntl-sc-block_8-0\" class=\"comp mntl-sc-block lifestyle-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text\"> The Easiest Trader Joe&#8217;s-Inspired Corn Dip Recipe <\/span> <\/h2>\n<ul id=\"mntl-sc-block_9-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">\n<li>1 (8-ounce) package cream cheese<\/li>\n<li>1 jar Trader Joe&#8217;s Cowboy Caviar Salsa<\/li>\n<li>2 cups (8 ounces) shredded Mexican-style cheese blend, plus a little extra for the top<\/li>\n<\/ul>\n<p id=\"mntl-sc-block_11-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Preheat the oven to 375\u00b0F. Spray a 7&#215;11-inch or 8&#215;8-inch baking dish with cooking spray, and set it aside. Place the cream cheese in a large microwave-safe bowl and microwave uncovered for a minute\u2014stopping halfway through to stir with a fork until it&#8217;s no longer lumpy. You may need an extra 30 seconds, depending on your microwave.<\/p>\n<p id=\"mntl-sc-block_13-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Although cream cheese isn&#8217;t my favorite, I don&#8217;t mind it at all in this dip. The jalape\u00f1os, chipotles in adobo, and spices in the salsa mask the tang. I tried the recipe with sour cream and Greek yogurt, and both were meh. I&#8217;d stick to full-fat cream cheese.<\/p>\n<figure id=\"mntl-sc-block_15-0\" class=\"comp mntl-sc-block lifestyle-sc-block-image mntl-sc-block-universal-image mntl-sc-block-image--no-theme no-theme mntl-sc-block-image figure-landscape figure-high-res\"><figcaption id=\"mntl-figure-caption_2-0\" class=\"comp mntl-figure-caption text-utility-100 figure-article-caption\"> <span class=\"figure-article-caption-owner\"><\/p>\n<p>Simply Recipes \/ Myo Quinn<\/p>\n<p><\/span><br \/>\n<\/figcaption><\/figure>\n<p id=\"mntl-sc-block_16-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Stir in the cowboy caviar and cheese. Pour the mixture into the prepared baking dish, and sprinkle a little extra cheese on top. Bake for 20 to 25 minutes until the edges are bubbling and lightly golden. Allow it to cool just at bit so that you don&#8217;t scorch your mouth.
