Jill explained to my class the importance of using high-quality ingredients, and one of the recipes she taught us was a classic Amatriciana sauce.\n<\/p>\n<p id=\"mntl-sc-block_7-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Jill suggested using pancetta if you couldn\u2019t find guanciale\u2014a cured Italian pork product that\u2019s traditional in the dish, but that can take a little hunting to find\u2014and I started making the pancetta version regularly. Soon after, I made it for my sister Julie, and she told me, \u201cJeanette, someday you\u2019re going to make your husband very happy.\u201d\n<\/p>\n<p id=\"mntl-sc-block_9-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Julie is sometimes more than a bit prescient\u2014she predicted that my son would be a jock before he\u2019d even exited my womb. Later that year, and after making pasta Amatriciana for myself probably a dozen times, I met an architect named Kyle. After he impressed me by taking me to lunch at a French cr\u00eaperie, we ended up talking for so long that dinner time rolled around.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_11-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> I looked into my refrigerator, and since I had the ingredients on hand to make pasta all\u2019Amatriciana, I whipped up a batch. \u201cThat sealed the deal,\u201d my husband later told me.\n<\/p>\n<p id=\"mntl-sc-block_13-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> I\u2019ve been making my \u201cMarry Me Pasta\u201d ever since. My husband and son love it because it\u2019s delicious, and I love it because I can make it in about half an hour with ingredients I almost always have on hand.\u00a0\n<\/p>\n<p><span class=\"heading-toc\" id=\"toc-use-pre-prepped-pancetta\"\/><\/p>\n<h2 id=\"mntl-sc-block_15-0\" class=\"comp mntl-sc-block lifestyle-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text\"> Use Pre-Prepped Pancetta <\/span> <\/h2>\n<p id=\"mntl-sc-block_16-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Though guanciale is the traditional pork used in Amatriciana, pancetta is easier to find. I usually stock up on 4-ounce packages of diced pancetta from the deli section every time I go to the grocery store.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_18-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> I keep two packages on hand in my freezer so that on days when I want something homemade but don\u2019t want to spend an hour in the kitchen, I can whip up this sauce with a can of crushed tomatoes, an onion, some wine, and crushed red pepper.\u00a0\n<\/p>\n<figure id=\"mntl-sc-block_20-0\" class=\"comp mntl-sc-block lifestyle-sc-block-image mntl-sc-block-image mntl-sc-block-image--no-theme no-theme figure-landscape figure-high-res\"><figcaption id=\"mntl-figure-caption_1-0\" class=\"comp mntl-figure-caption text-utility-100 figure-article-caption\"> <span class=\"figure-article-caption-owner\"><\/p>\n<p>Simply Recipes \/ Alexandra Shytsman<\/p>\n<p><\/span><br \/>\n<\/figcaption><\/figure>\n<p><span class=\"heading-toc\" id=\"toc-how-to-make-my-marry-me-pasta\"\/><\/p>\n<h2 id=\"mntl-sc-block_21-0\" class=\"comp mntl-sc-block lifestyle-sc-block-heading mntl-sc-block-heading\"> <span class=\"mntl-sc-block-heading__text\"> How to Make My Marry Me Pasta <\/span> <\/h2>\n<p id=\"mntl-sc-block_22-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">To make four to six servings, you\u2019ll need:\n<\/p>\n<ul id=\"mntl-sc-block_24-0\" class=\"comp mntl-sc-block mntl-sc-block-html\">\n<li>1 teaspoon extra-virgin olive oil or bacon grease<\/li>\n<li>1 cup (8 ounces) diced pancetta<\/li>\n<li>1 medium yellow or white onion, diced<\/li>\n<li>12 ounces angel hair pasta\u00a0<\/li>\n<li>1 (28-ounce) can crushed tomatoes<\/li>\n<li>1 cup dry red wine<\/li>\n<li>2 teaspoons granulated sugar<\/li>\n<li>1 teaspoon crushed red pepper flakes<\/li>\n<li>1\/4 teaspoon salt, plus more for seasoning the pasta water<\/li>\n<li>1\/8 teaspoon freshly ground black pepper<\/li>\n<li>Freshly grated Romano or Parmigiano Reggiano cheese, to taste<\/li>\n<\/ul>\n<p id=\"mntl-sc-block_26-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Bring a large pot of salted water to a boil over high heat. Meanwhile, heat the oil in a large, deep skillet or braiser over high heat for 1 to 2 minutes, then add the diced pancetta. Saut\u00e9, stirring frequently, until the pancetta renders and starts to become a little bit crispy, about 5 minutes.\u00a0\u00a0\n<\/p>\n<p id=\"mntl-sc-block_28-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Add the onions and continue saut\u00e9ing on high, stirring frequently, for 3 to 5 minutes. Reduce the heat to low and cook, stirring occasionally, until the pancetta is crispy and the onions are somewhat caramelized, about 10 minutes.\u00a0\u00a0\n<\/p>\n<p id=\"mntl-sc-block_30-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> By this point the water should be boiling\u2014add the pasta to the pot and cook according to the package directions for al dente, 2 to 5 minutes. Drain the pasta.\n<\/p>\n<p id=\"mntl-sc-block_32-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Meanwhile, add the tomatoes, wine, sugar, red pepper flakes, salt, and pepper to the pancetta and onions. Bring the heat up to medium and cook, stirring occasionally, until the wine has reduced and the sauce has thickened, 5 to 10 minutes. The pasta and sauce should be ready at about the same time.\u00a0\n<\/p>\n<p id=\"mntl-sc-block_34-0\" class=\"comp mntl-sc-block mntl-sc-block-html\"> Add the drained pasta to the sauce and toss with the sauce over low heat until well-coated. Sometimes, I add chopped mushrooms while I saut\u00e9 the onions since my family loves mushrooms, and if I\u2019ve got some fresh basil or parsley growing in my summer herb garden, I\u2019ll add a handful of that, too.
